Ginger Shot

An Icelandic friend introduced me to this nippy wee shot that supports healthy digestion but also an excellent anti-inflammatory fighter, but generally just gives you a good kick in the pants first thing in the morning! (I also find it is a great hangover buster!)
It is very simple to make, can be added into smoothies/juices and when you make 1 batch can last you a long time. So, without further ado –

500g Fresh Ginger
3 litres cold water
1 lemon

Grate all of  the ginger (with skin on) and put in a medium sized pot, cover with 3 litres of cold water. 
Bring to the boil on a medium heat and let boil, partially covered for 45 mins.

After 45 mins, remove lid, switch of heat and let cool down completely – this could take a few hours.
Once cooled, sieve the liquid and squeeze any excess ginger juice through also.
I always squeeze the juice of 1 lemon into my ginger juice, but you can experiment with whatever, fresh apple juice is also very nice.

Store in a large jug with tight lid or clean bottle.
