Healthy Chocolate Caramel Treats

Saturday is ”Nammi Dagur” or treat day, but you don’t have to be unhealthy to have yourself something sweet and indulging.


I found this great recipe on one of my favourite Icelandic recipe websites Gulur, Rauður, Grænn og Salt (Yellow, Red, Green and Salt) I love it as it’s so simple and easy to do, however mine did not turn out looking the same as these pretty pictures from the website, but they sure tasted great which is most important for me.
Great as a snack with coffee and the macros are just a great as the taste!

Yield: 14-16 depending on how small you manage to roll them.

1 Treat = Calories: 97 Fat: 5g Carbs: 19g Protein: 1.1g

200g of pitted dates 
1/2 tbsp smooth peanut butter
100g Green & Blacks 85% Dark Chocolate
1 tbsp coconut oil


Start by letting the dates rest in some warm water for about 20 minutes to let them soften up.
Put the dates and peanut butter together in the food processor or blender and whizz until smooth consistency.
Keep the mixture in the refrigerator for about 20 minutes, until it becomes stiff.
Take tablespoon measures and form into balls, you should manage about to 14 – this step can be quite tricky due to the stickiness of the mixture, so perhaps use different shapes or use spoon to spoon technique.
Place of baking sheet and refrigerate for another 20 minutes.
Melt the dark chocolate with the coconut oil.
You can pour the chocolate over the balls and leave to cool again, however I used a skewer and dipped them into the chocolate – hence why they look the way they do.
