These delicious muffins are perfect for a quick nutritious breakfast, snack on the go or an evening treat.
I was inspired by the recipe from following the SnapChat of Fitubrennsla (@fitubrennsla) Telma Matthíasdóttir controls this inspiring SnapChat full of fun, colourful recipes and healthy lifestyle motivation. The recipe is really simple and has a few basic ingredients, have a go and treat yourself.
Yield: 10 Muffins
1 Muffin = Calories: 109 Fat: 3.9g Carbs: 16.3g Protein: 3.9g
4 medium eggs
100ml finely chopped AND pitted dates
100ml chopped skinless almonds
2 large ripe bananas
pinch of cinnamon
pinch of salt
Preheat the oven to 180°C
Chop the dates and almonds and set aside.
Add the bananas, 4 eggs and pinch of salt into the blender or food processor, whizz on LOW speed for about 30 seconds until blended smooth.
Pour into a large mixing bowl, then add the remaining ingredients – dates, almonds, oats and cinnamon.
Stir gently until well mixed.
Transfer into ”greased” muffin tins. (You may coat with a light cooking spray or coconut oil)
Bake in oven for 15 mins until golden brown.
Remove and leave to cool before attempting to remove.
