Tunacado Salad

Hungry? Looking for a quick bite to eat?

This topping is not only delicious, healthy and nutritious but also really easy and quick to make. It’s perfect for spreading on top of some rice cakes or ryvita or you could even mix it into a pasta or quinoa for lunch. It’s even possible to be creative with the spices, such as curry or cumin. Even though there is 5g of fat per serving, don’t worry as it’s all good fat coming from the avocado!!


Yield: 6 servings

1 Serving = Calories: 69 Fat: 5g Carbs: 3g Protein: 5g

1 can of Tuna (in water) drained
1 large ripe avocado
1/2 cup Cucumber finely chopped
2 spring onion finely chopped
1 hard boiled egg finely chopped – May use egg white only
1 tsp cayenne pepper
1 tsp piri piri spice mix
1 tsp white pepper
pinch of sea salt


In a large bowl, add the drained tuna and gently mash with fork to separate, add the avocado and mash together until smooth and creamy.


Add all other ingredients to bowl and mix until blended well.
