Apple Protein Cake


I don’t know about you guys, but who doesn’t love cake?! Obviously if you are counting macros, dieting, skipping sugar or avoiding gluten then when was the last time you actually treated yourself to a slice of cake??

This recipe was an instant hit in my home and packed with protein, nobody felt guilty about even having a second slice!

Lets get to it!…
Yield: 12 servings (approx)

1 Slice = Calories: 95 Fat: 1.7g Carbs: 13.2g Protein: 6.6g

2 scoops The Protein Chef Baking Protein
1 cup of ground down gluten free oats
2 tsp baking powder
pinch of salt
2 tbsp honey or agave
200g greek yogurt (I used Arna lactose free caramel and pear)
1 medium egg
50g egg whites
100g apple puree or apple sauce (No added sugar)
2 tsp vanilla drops
2 tsp cinnamon
1 apple for topping

Preheat oven to 180°C, grease a cake tin with zero calorie cooking spray or coconut oil.

Add ALL of the above ingredients (except apple) into food mixer, start with the dry ingredients and mix well on low speed until the mixture is blended. The consistency will be very wet and loose.
Pour into baking pan.
Core and thinly slice apple of your choice, arrange as you will on top of the cake mix.
Bake for 30 mins until golden brown.
Remove from oven when tooth pick comes out clean.
LET COOL all the way down – very important step.

Glaze with warm honey.
